1 C cooked oatmeal
1 T sunflower seed butter
2 T blackberry peach verjus
Directions:

Mix all ingredients together and enjoy!

blackberry peach cheesecake

This will satisfy your craving for sweet and cream cheesy.  It’s not exactly cheesecake, but it will do for breakfast.

Ingredients:

1 C cooked oatmeal
2 T blackberry peach verjus reduction (recipe here), plus a spoonful of fruit
1 T agave (or to taste)
1 T vegan cream cheese (or regular)
Directions:

Mix cream cheese, agave (if you like it sweet) and reduction with oatmeal well.  The oatmeal should melt the cream cheese and soon you’ll have a nice blend.  If you’re so inclined, garnish with a little of the blackberry peach fruit from the reduction.

2 spoonfuls of reduction
dash of salt

Reduction:

1 C fresh picked blackberries
1/2 C sliced peaches
1 C sugar
1 C Navarro Verjus (or any tart juice)

Directions:  Simmer sugar, fruit and verjus for about 20 minutes (or longer, depending on how saucy you like your reduction).

Add a heaping tablespoon of coconut milk to oatmeal and a dash of salt.  Mix well and garnish with reduction sauce!

We were pleasantly surprised when visiting our friends the other evening and they offered some fresh blackberries from their backyard.  I took them up on the offer and was quite happy when I realized that I had worn my boots, it made stomping through prickly vines that much easier.  Nevermind that half of the container was gone before we returned home…These blackberries pair nicely with the peaches and verjus in the reduction.  Yum!

butter or earth balance to taste
2 T salted cashews

Reduction:

1 C blueberries
1 C sugar
1 C Navarro Verjus

Directions:  Simmer sugar blueberries and verjus for about 20 minutes (or longer, depending on how saucy you like your syrup).  Add sauce and butter to oatmeal and mix well.  Garnish with salted cashews and enjoy!

mOMent:  “On the tip of my tongue” is a common saying for when one would like to express something but is unable to come up with the words for it on demand.  Does this happen to you?  And if it does, what is your solution?  I find that relaxing and releasing the need to say anything helps tremendously.  Sometimes it is just my body telling me to slow things down…and perhaps whatever I “need” to say doesn’t actually need to be said.
