A little sweet, a little spicy, a lot delicious. Happy Herbivore meal plans to the rescue again. It was a perfect meal for a hot evening when I didn’t feel like cooking anything. The only thing that needed heat was the quinoa, and that could have been made beforehand. A perfect summer dish.
My mother in law made this beautiful quinoa salad with a hint of sesame, when my husband and I came for a visit. I just couldn’t resist taking a photo. It’s such a delightful summer meal.
So, last night was supposed to be a Grilled Corn & Quinoa Salad, which actually ended up being “canned corn thrown in a pan with BBQ flavoring, green onion and grape tomatoes, mixed with quinoa and cilantro” we also added some avocado which gave it a little flair, but I really think next time we’ll try to find a grill to do the recipe as it suggests…because what was created was a little boring. Which I’m not a fan of…OH WELL!
On another note, I found a really cute avocado.
