Black Bean Peach Quinoa Bowl

A little sweet, a little spicy, a lot delicious. Happy Herbivore meal plans to the rescue again. It was a perfect meal for a hot evening when I didn’t feel like cooking anything. The only thing that needed heat was the quinoa, and that could have been made beforehand. A perfect summer dish.

1 C cooked oatmeal
2 T peach lavender butter

Directions: Mix all ingredients together and enjoy!

cold fruity yumminess!

Well this morning it’s still hot from yesterday’s heat and I thought some cold fruity yumminess was in order. ¬†So, this om of the day uses ingredients ice-cold from my fridge.


1 C cooked oatmeal
1 blackberry peach verjus
1 t earth balance
1 t creamer
1 T strawberry sauce


Stir in earth balance and creamer with oatmeal.  Add strawberry sauce and verjus, mix well!

mOMent: Studies say that screens such as computer monitors and televisions, cell phones and ipads can cause our brains to fatigue. ¬†It is healthy and beneficial to get outside and rest that sweet brain of yours. ¬†Consider taking a walk today with that intention, rest, recharge and recuperate…your brain will thank you.

This will satisfy your craving for sweet and cream cheesy. ¬†It’s not exactly cheesecake, but it will do for breakfast.


1 C cooked oatmeal
2 T blackberry peach verjus reduction (recipe here), plus a spoonful of fruit
1 T agave (or to taste)
1 T vegan cream cheese (or regular)

Mix cream cheese, agave (if you like it sweet) and reduction with oatmeal well. ¬†The oatmeal should melt the cream cheese and soon you’ll have a nice blend. ¬†If you’re so inclined, garnish with a little of the blackberry peach fruit from the reduction.

We were pleasantly surprised when visiting our friends the other evening and they offered some fresh blackberries from their backyard.¬† I took them up on the offer and was quite happy when I realized that I had worn my boots, it made stomping through prickly vines that much easier.¬† Nevermind that half of the container was gone before we returned home…These blackberries pair nicely with the peaches and verjus in the reduction.¬† Yum!


1 C oatmeal
2 T (or more) reduction sauce
2 spoonfuls of fruit from reduction


1 C fresh picked blackberries
1/2 C sliced peaches
1 C sugar
1 C Navarro Verjus (or any tart juice)

Directions:  Simmer sugar, fruit and verjus for about 20 minutes (or longer, depending on how saucy you like your reduction).

Add sauce to oatmeal and mix well.  Garnish with fruit and enjoy!

mOMent: Writing letters the old fashioned way (with a pen and paper) can be therapeutic.¬† Today, consider writing to someone you love and remind them of why they are so wonderful.¬† Seal it with a kiss and send it off…

Healthy donuts for breakfast?¬† Donut peaches that is… I decided to try mingling the lavender and peach flavors and when the simple syrup is kept subtly in the background it seems to be very pleasant.¬† Try it out, and let me know what you think.


1 C cooked old-fashioned oats
1 T simple syrup
1 donut peach

Directions: Chop half of the donut peach into bite sized pieces and mix with simple syrup and oatmeal well.¬† Slice the remaining donut peach and garnish oatmeal…
