hazel-bites

I saw this recipe and knew immediately that I needed to make it.  So here it is, with my adaptations…

Ingredients:

Bites:
120 g dates
240 g hazelnuts
40 g chocolate chips, melted
40 g cocoa
1/2 c maple syrup plus 2 tsp
1 t vanilla
1/4 t salt

Icing:
20g cocoa powder
1/4 c maple syrup
120 g avocado

Toasted Hazelnuts
40 g hazelnuts
1 T maple syrup
pinch of salt



Directions:

Pulse 240g (2c) hazelnuts in food processor until it’s finely ground, like a flour. Add dates, 1/2 c maple syrup (plus 2 tsp extra if dough seems dry), 40g (1/2 c) cocoa powder, melted chocolate chips, vanilla and salt (to taste). Process dough until it become sticky and thick.

Transfer dough into an 8 x 8 pan and spread out into an even layer. Cut into even pieces so it will be easy to layer with the icing.

Mix 40g (1/3 c) chopped hazelnuts with 1T maple syrup and a pinch of salt. Place in 300 degree oven until slightly toasted. Keep an eye on these, they will burn quickly once they are done. Set aside to cool while making icing.

To make the icing blend the avocado (1 medium) with 20g (1/4 c) cocoa powder and 1/4c maple syrup and 1/4 t vanilla. Blend until smooth.

Assemble the bites by spreading icing on bottom layer, adding the second bite, layering more icing and finally topping with the toasted hazelnuts.

maple pecan and nog

Silk nog, maple syrup and pecans!

Ingredients:

1 C cooked old-fashioned oats
2 T maple syrup (or to taste)
¼ C pecans
¼ C silk nog

Directions:

Mix all ingredients together and enjoy!

Pear and Maple Caramel Om of the Day…

2 T maple caramel with chopped pears, over low heat…

Simmer until melted and yummy!

1 pear chopped

Directions: Cut up pear and simmer in small pan with maple caramel until soft (adding a little water if necessary).  Add to oatmeal and enjoy!

Directions: Cut up pear and simmer in small pan with maple caramel until soft (adding a little water if necessary), add pistachios and simmer for a few minutes longer.  Add to oatmeal and enjoy!

So you  know the other day when I shared the vegan maple caramel recipe?  And then after that there was the maple pistachio recipe?  Well…today I just added the maple pistachios plus a touch of maple syrup to the om of the day. 

 

Ingredients:

1 C cooked oatmeal
1/3 C maple pistachios
2 t maple syrup

Directions: Mix maple syrup and oatmeal, top with maple pistachios. Mix it up and enjoy!

Who knew?  Well, I had a suspicion that it would work, or at least be worth an om of the day.

dried pineapple and maple caramel sauce (chilled, so not so saucy)

heat until sauce infuses the pineapple

Add to your om!

Ingredients:

1 C cooked oatmeal
1/3 C baby pineapple
1 T maple caramel

Directions: Heat pineapple and maple syrup until pineapple plumps up a little and the sauce is nice and toasty. Add to oatmeal. Mix it up and enjoy!
