”Grilled” Sweet Potato Salad

This recipe asked us to grill our sweet potato. Well, we don’t have a grill, so we used our panini press. It turned out just perfect. The salad contained corn, avocado, beans, bell pepper, green onion and I added some spices too. It was really a treat, especially on a hot evening. This will be a favorite for sure.

A little bit of a fail…

So, last night was supposed to be a Grilled Corn & Quinoa Salad, which actually ended up being “canned corn thrown in a pan with BBQ flavoring, green onion and grape tomatoes, mixed with quinoa and cilantro” we also added some avocado which gave it a little flair, but I really think next time we’ll try to find a grill to do the recipe as it suggests…because what was created was a little boring. Which I’m not a fan of…OH WELL!

ginger walnut lime

This om of the day was inspired by some cookies I recently made. They were a big hit, and guess what…so is this om of the day!

Ingredients:
1 C cooked old-fashioned oats
2 T candied ginger
2 T walnuts, chopped finely
1 lime
1 T agave

Directions: Juice the lime and add to all other ingredients, mix well in oatmeal and enjoy!

lime & ginger

This is great one for anyone with an upset tummy.  It’s not a traditional ginger recipe, so it’s a nice change of pace.

Ingredients:

1 C cooked old-fashioned oats
1 t ginger (ground)
1 T crystallized ginger
1 T lime simple syrup

Directions:
Mix ground ginger and simple syrup with oatmeal well.  Garnish with

crystallized ginger and enjoy!

apricot lime

This recipe really works well if you enjoy tart flavors mixed with subtle sweetness.  If limes are in season…even better!

Ingredients:

1 C cooked old-fashioned oats
1 apricot
1 lime
1 T sugar
splash of water

Directions:  Chop apricot.  Add juice from one lime and sugar to a pan over medium-low heat, add apricot and let simmer for a while, until apricot becomes soft, plump and the juice becomes thick.  Add to oatmeal and enjoy!

coconut lime

You put the lime in the coconut and shake it all up… I had this song ringing through my mind and I thought, hey, why not?!  So, here it is…a bit tart and a bit sweet, but definitely not your average bowl of om.

Ingredients:
1 C cooked old-fashioned oats
juice from one lime
1 T plus 1 t powdered sugar
1/4 t coconut extract
1 T shredded coconut

Directions:
Mix the juice from lime and extract.  Add powdered sugar and whisk until smooth.  Add shredded coconut and then add to oatmeal.  Enjoy the sweet tartness!
