Mmmmm…garlic! This creamy garlic sauce was easy to make and very versatile. The recipe was for penne pasta and garlic sauce, but as you can see from the photos below I enjoyed mine atop of a potato while Rubes enjoyed his on tri-color pasta from Trader Joe’s.
Again, another hit from Happy Herbivore meal plans. Gotta love it.
I know, I know…garlic and oatmeal aren’t the normal combination. But, I was craving something savory and in hindsight I think I would add something else to give it a little more texture. However, it was still very, very good.
1 C cooked oatmeal
2 T garlic buttery spread (see below)
Directions: The garlic butter is sooo easy to make. I use 1 stick of earth balance and melt it with 4 cloves of garlic over a low-medium heat, in a small sauce pan. Mix it together well and then put into a heat-proof container to store.
For your om of the day add a tablespoon or more of the spread into your oatmeal. Mix well and enjoy!
